Thank you, so much, @Claire.Tammaro for this beautiful heart loaf, and for the incredibly sweet note 🥹 - it meant the world! (Also, I’m kinda thinking Claire needs to give us a sourdough class, what do you think?! 🤔 🥰)
Here’s how I made the Sourdough Pizza Toast 👇🏼
Preheat oven to 425F. Slice your sourdough into pieces no more than about half an inch thick. Slightly thinner is even better since the edges get extra crispy.
Place the bread on an oven safe wire rack set over a parchment lined baking sheet. Brush both sides lightly with olive oil. On the side facing up, season with garlic powder, dried oregano, and grated Parmesan cheese.
Bake in a 425° oven for 8 to 10 minutes, until lightly toasted and crisp.
While the bread is toasting, add a little butter to a skillet over medium heat. Add 8 to 10 cherry tomatoes, quartered, depending on the size of your bread. Season with garlic salt, dried oregano, a little bit of black pepper, and a sprinkle of sugar. Cook, stirring and breaking them down, until they become soft and jammy. Remove from the heat and let cool slightly.
Once the toast is ready, spread an even layer of the jammy tomatoes on top. Sprinkle with grated Parmesan, then add shredded cheese of choice. I used an Italian blend, but mozzarella works great too. Add pepperoni if using. The @HORMEL®️ Pepperoni was delicious!
Return to the 425° oven and bake until the cheese is melted to your liking.
Enjoy as is, or finish with red pepper flakes, a small splash of red wine vinegar (this is a pizza game changer!), and a drizzle of balsamic glaze or hot honey!
Save this one for the next time you’ve got good bread and want something simple, but special 🤍 And if you aren’t already, follow Claire - she’s the best!
Making sourdough pizza toast at home has truly become one of my go-to comfort foods, especially when I have a fresh loaf of sourdough bread at hand. The beauty is in the simplicity and how each ingredient shines through while complementing the others perfectly. One thing I learned while experimenting is that slicing the sourdough thinner than half an inch helps achieve those irresistibly crispy edges that add a delightful texture to every bite. Brushing the bread lightly with olive oil on both sides ensures a golden crust and a rich flavor. The jammy cherry tomatoes are the star topping here. Cooking them slowly with garlic salt, dried oregano, and a pinch of sugar softens them naturally and intensifies their sweetness, turning them into a beautiful spread. Letting them cool before layering prevents the bread from getting soggy, maintaining that crispiness. For the cheese, using an Italian blend or fresh mozzarella really melts into a luscious topping that pairs wonderfully with the tang of the tomatoes. Adding pepperoni is optional but can elevate the pizza toast into something a bit heartier and full of savory goodness—@HORMEL®️ Pepperoni is a great choice for that. A little tip I swear by: finishing the toast with a splash of red wine vinegar is a game changer! It balances the richness of the cheese and tomato and adds an unexpected depth of flavor that really wakes up your taste buds. A drizzle of balsamic glaze or hot honey adds that perfect touch of sweetness or spice. Something else I appreciate about this recipe is its versatility. You can easily swap ingredients based on what you have—herbs, cheeses, or even add some fresh basil or arugula after baking for freshness. It’s a wonderful way to use up good bread and transform it into a meal that feels both cozy and a bit indulgent. Overall, this sourdough pizza toast feels like a comforting act of kindness, much like how food made in someone's kitchen carries warmth and intention. It’s a wonderful way to savor the simple ingredients and create a shared moment of joy around food.
