This is not a traditional kani salad… but it is fresh, crunchy, creamy, a little spicy, and very addictive 😋 Perfect as a side, a light lunch, or something to scoop with seaweed sheets, crispy wontons, etc.
No measurements needed — just taste and adjust as you go 🤍
Here’s how I make it:
Thinly slice cabbage, red pepper, and cucumber.
Pull apart leg style imitation crab into thin strings (it doesn’t have to be perfect — think string cheese).
Add everything to a bowl and season with:
• pinch of salt
• ground white pepper (black works too)
• splash of low sodium soy sauce
• small drizzle toasted sesame oil
• Kewpie mayo (regular works!)
• little red wine vinegar
• little rice vinegar
• sriracha
Toss well, taste, and adjust until it makes your heart happy 😌
Finish with Everything But the Bagel seasoning and toss again.
So fresh, so crunchy, and really fun to eat 😎
