Prime Rib Rub

Rub:

• 5 Tablespoons Olive Oil

• 2 Tablespoons Cracked Black Pepper

• 2 teaspoons Garlic Powder

• 2 teaspoons Dried Rosemary

• 2 teaspoons Dried Thyme

• 1 teaspoon Onion Powder

• 1 teaspoon Smoked Paprika

• ½ teaspoon Cayenne Pepper

Combine all ingredients and let stand for at least 1 hour

Ingredients:

• Rub

• 2 ½ teaspoons Kosher Salt

• Up to 8 Lb. Standing Rib Roast (double the Rub and Salt for a larger roast)

Directions:

1) Rub the entire roast with Kosher Salt. Refrigerate for 24 hours

2) Rub the entire roast with the olive oil based rub. Refrigerate for at least 12 hours

3) Preheat Oven to 325°

4) Roast until the internal temp reaches 120°, estimate about ½ hour per pound.

5) Increase the oven temp to 500° oven to achieve desired temp. This will produce a

reverse sear. Note that temp will rise after the roast is removed and the meat rests.

For a perfect medium rare, pull the roast at 130 degrees.

6) Remove the roast from the oven and allow to rest 20 minutes before carving
