Crispy Cheesy Chicken Baked Tacos

Easy oven-baked tacos with a creamy avocado sauce.

These crispy baked tacos are perfect for busy weeknights and come together with simple ingredients. Crunchy on the outside, cheesy on the inside, and finished with a fresh avocado sauce.

Ingredients:

2–3 cups shredded chicken

Tortillas

Shredded cheese (cheddar, Mexican blend, or mozzarella)

Olive oil

½ red onion, sliced

2 bell peppers, sliced

Salt and black pepper

1 can Rotel

Homemade Taco Seasoning

1 Tbsp chili powder

2 tsp ground cumin

1 tsp paprika

1 tsp salt

½ tsp garlic powder

½ tsp onion powder

½ tsp dried oregano

Red pepper flakes (optional)

Creamy Avocado Sauce

¾ avocado

Plain Greek yogurt

Fresh or jarred cilantro

Salt and pepper, to taste

Splash of olive oil

1 Tbsp minced garlic

Juice of ½ lime

Spoonful of Rotel (optional)

Small amount of chopped red onion

Blend all ingredients in a blender or food processor until smooth and creamy. Adjust seasoning to taste.

Directions:

Preheat oven to 425°F. Line a baking sheet with parchment paper or lightly oil it.

Heat 1 Tbsp olive oil in a large skillet over medium heat. Season chicken with salt and pepper and cook for 5–8 minutes per side, until cooked through. Remove and set aside.

Add another 1 Tbsp olive oil to the skillet. Add onion and bell peppers, season with salt, pepper, and taco seasoning, and sauté for 3–4 minutes until softened.

Shred the cooked chicken and return it to the skillet.

Add the can of Rotel and cook for 4–5 minutes, stirring to combine.

Brush tortillas with olive oil and place them oiled side down on the baking sheet.

Fill tortillas with chicken mixture and shredded cheese, then fold in half.

Arrange tacos in a single layer and bake for 7 minutes. Flip, add extra cheese on top, and bake another 7 minutes.

For extra crispiness, broil for 1–2 minutes, watching closely.

Serving Suggestions:

Serve warm with creamy avocado sauce and your favorite taco toppings. These are great for weeknight dinners, game day, or casual entertaining.
