Ingredients:

8 oz rotini or fusilli pasta, cooked and cooled

1 cup cherry tomatoes, halved

1 cup cucumber, diced

½ small red onion, finely chopped

1 can (5-6 oz) salmon, drained & flaked

¼ cup fresh parsley or dill, chopped

Dressing:

3 tbsp olive oil

2 tbsp fresh lemon juice

1 tsp Dijon mustard

Salt & pepper to taste

Instructions:

In a large bowl, combine cooked pasta, tomatoes, cucumber, red onion, salmon, and herbs.

Whisk dressing ingredients together in a small bowl.

Pour dressing over salad and toss gently to combine.

Chill for 20 minutes before serving for best flavor.
