▢ ¾ pound parsnips, cut into 1 ¼-inch pieces

▢ 1 acorn squash, seeded, cut into 1 ¼-inch pieces

▢ 1 large red onion, peeled, with root end left intact cut into ½-inch wedges

â–¢ 2 tablespoon olive oil

â–¢ 4 tablespoon maple syrup

â–¢ 1 teaspoon apple cider vinegar

â–¢ 1 teaspoon sea or kosher salt

â–¢ 1 teaspoon cracked black pepper

â–¢ 1 tablespoon fresh thyme leaves or rosemary

â–¢ Nonstick cooking spray

Instructions

Heat oven to 425°F. Line two baking sheets with parchment paper and set aside.

Combine olive oil, maple syrup, and apple cider vinegar into a small bowl or 1-cup measuring cup and whisk until smooth.

Place the prepared root vegetables into a large mixing bowl. Pour the maple oil over the vegetables and toss until they're evenly coated.
