Vegan Chinese Christmas

Eating Chinese food for Christmas? Yes! But this time I decided to make a healthier option at home.

I used NYT Cooking vegan Chinese recipe "Sweet and Sour Cauliflower" and adapted it. I added extra firm tofu. I doubled the sauce recipe but used 5 tablespoons of sugar instead of six. I doubled the sauce recipe because I needed some of the sauce to cook with the tofu. I substituted regular soy sauce for low sodium soy sauce and regular ketchup for no sugar added ketchup. And I put it on top of brown rice instead of white rice or regular noodles.
