I've found that a good 'give' feels like a firm sponge to the touch. My absolute secret weapon for choosing the best pineapple is the smell test! Forget sniffing the top; you need to smell the base of the pineapple. Hold it up and take a deep whiff of the bottom. A sweet, strong, distinctive pineapple aroma means it's ready.
