Southern Cream Cheese Pound Cake

Marguerette Allen’s Cream Cheese Pound Cake

“Doesn’t come out right if you don’t use cake flour,” Allen says.

Ingredients:

• 8-ounce package cream cheese

• 12 ounces (3 sticks) butter or margarine (softened)

• 3 cups sugar

• 6 large eggs

• 1 teaspoon vanilla

• 1 teaspoon almond extract

• 1 teaspoon butter flavoring

• 3 cups Swan’s Down brand cake flour

Instructions:

1. Set oven to 325 degrees. Then grease and flour a bundt pan or tube pan.

2. Cream the butter and cream cheese together until fluffy.

3. Blend in sugar. Add eggs, one at a time, blending well.

4. Mix in flavorings, then add cake flour.

5. With an electric mixer, beat for 3 minutes; if by hand, mix for 300 strokes.

6. Pour into the pan and bake for 90 minutes, or until a toothpick inserted in the middle comes out clean.
