SHRIMP TACOS

Made these shrimp tacos two ways; grilled and fried; because Mom deserves options!😌

Layered on warm street tortillas with crispy thin potatoes for crunch, fresh mango pico, cilantro, and a drizzle of sweet chili sauce… with guacamole on the side.

It’s sweet, savory, crispy, fresh; everything in one bite.

Definitely a fun Mother’s Day brunch/lunch idea when you want something different but still thoughtful.

... Read moreWhen making shrimp tacos at home, balancing textures and flavors is key to creating a memorable dish. The combination of juicy shrimp—whether grilled for a smoky char or fried for a crispy bite—with the refreshing sweetness of mango pico adds a delightful contrast that elevates these tacos beyond the ordinary. In my experience, using small white street tortillas provides a perfect base; their softness complements the range of textures, from crispy potatoes to the creamy guacamole served on the side. Thinly sliced potatoes fried until golden not only add satisfying crunch but also bring an extra layer of comfort food appeal. For the mango pico, fresh, ripe mangoes combined with finely diced red onions and a hint of jalapeño create a fresh burst of flavor that cuts through the richness of the shrimp and potatoes. A squeeze of lime juice and a pinch of salt tie everything together, giving each bite a bright, zesty finish. The drizzle of sweet chili sauce offers a subtle heat paired with sweetness, which works wonderfully with the Creole-seasoned shrimp. Personally, I find using Creole seasoning a great way to add depth without overpowering the natural flavor of the shrimp. If you want to customize the heat, you can adjust the jalapeño in the pico or the amount of chili sauce accordingly. Serving guacamole on the side allows each person to add creaminess as they like, and it rounds out the meal nutritionally with healthy fats and fresh avocado flavor. These shrimp tacos make a thoughtful and delicious option for occasions when you want to offer something different but deeply satisfying. Whether for a Mother's Day brunch or a weekend treat, they strike a perfect balance between effort and impressive taste, making Mom or any loved one feel truly celebrated.
