Lemon Curd Pop Tarts
Made some lemon curd pop tarts using frozen Pillsbury ready-to-bake pie crust sheets… and this might be my favorite easy dessert lately.
Cut them into rectangles, filled with Trader Joe’s lemon curd, sealed the edges with a fork, and brushed with egg wash for that golden finish.
They baked up flaky, buttery, and filled with that bright lemon flavor. Simple shortcut, but it came out like something way more intentional.
Ingredients:
* 1 box frozen Pillsbury pie crust sheets (thawed)
* Trader Joe’s lemon curd
* 1 egg (for egg wash)
Instructions:
1. Prep
Preheat oven to 400°F and line a baking sheet with parchment paper.
2. Cut dough
Roll out pie crust and cut into even rectangles.
3. Fill
Add a spoonful of lemon curd to the center of half the rectangles, leaving space around the edges.
4. Seal
Place another rectangle on top and seal edges using a fork.
5. Egg wash
Brush tops with egg wash for that golden finish.
6. Bake
Bake for 15 minutes or until golden brown
Icing
1 Cup Confectionery Sugar
1 Teaspoon Lemon Extract
1 Tablespoon water
Optional (top with lemon zest)
How I enjoyed it:
