Gooey Pecan Cookie Bars

These Gooey Pecan Cookie Bars are dangerously good. Like… hide-the-pan good. 😭 The buttery cookie base with that rich gooey pecan topping tastes like a pecan pie and cookie mashup. I almost didn’t share this recipe because I wanted to keep it for myself.

The best part? I made them completely from scratch with ingredients I already had at home. I didn’t even have dark Karo syrup, so I made my own substitute and it still turned out perfect.

✨ Prep Time: 20 minutes✨ Bake Time: 25-30 minutes✨ Cooling Time: 2 hours (overnight in the fridge is even better!)

🍪 Cookie Base• 1 stick softened butter• 1/2 cup sugar• 1 egg• 1/2 tsp vanilla extract• 1/4 tsp salt• 1 tsp baking soda• 1 1/4 cups all-purpose flour

✨ Pecan Topping• 1/2 cup dark brown sugar• 1/2 cup sugar• 1/2 cup melted butter• 2 eggs• 1/4 cup dark Karo syrup• 2 tsp vanilla extract• 1 cup pecans

✨ Dark Karo Syrup SubstituteI didn’t have dark Karo syrup, so I mixed:• 1 tbsp molasses• 3 tbsp light Karo syrup

It worked perfectly!

👩🏽‍🍳 Instructions

Preheat oven to 350°F.

Cream together softened butter and sugar for the cookie base.

Mix in egg and vanilla.

Add salt, baking soda, and flour until combined.

Press dough evenly into a prepared baking pan.

In another bowl, whisk together brown sugar, sugar, melted butter, eggs, syrup, and vanilla.

Fold in pecans.

Pour topping over cookie base.

Bake for 25-30 minutes. The center should still jiggle slightly.

Cool for at least 2 hours. I highly recommend refrigerating overnight.

Warm at 300°F for 10 minutes before serving for the ultimate gooey texture.

✨ Personal Tips• Don’t overbake them — the jiggle in the center is what gives that gooey texture.• Overnight chilling makes the flavor even richer.• Warm them up before eating and add vanilla ice cream if you really want to show out. 😭

These bars are rich, buttery, gooey, and packed with pecan flavor without being overly sweet. Next time I might add a tiny sprinkle of flaky sea salt on top for contrast.
