Stir Fry
Spice Level: 🔥🔥🔥
Got this idea from another recipe I found on here but wanted to try with rice noodles. Next time I’m definitely gonna make it with rice so I can see which one is better. Next time I will either try to maybe not season the chicken with cayenne OR put less sriracha.
Ingredients:
For the Stir Fry:
• 2 tbsp olive oil, divided
• 4 boneless, skinless chicken breasts, cut into 1-inch pieces
• Salt and pepper, to taste
• 1 red bell pepper, sliced
• 1 yellow bell pepper, sliced
• 1 small bag sugar snap peas
For the Sauce:
• 2/3 cup soy sauce
• 6 tbsp honey
• 6 tbsp sriracha
• 2 tbsp apple cider vinegar
• 2 tsp sesame oil
• 6 garlic cloves, minced
• 1 tsp black pepper
Instructions:
1. Heat 1 tbsp of olive oil in a large skillet over medium-high heat. Add the chicken, season with salt and pepper, and cook until lightly browned, about 4–5 minutes. Set aside.
2. Drizzle the remaining olive oil into the skillet, add bell peppers and sugar snap peas, and I cooked them for a good 10-15 minutes with the lid on to steam them kind of. Stirring them occasionally.
3. Meanwhile, whisk together all sauce ingredients in a bowl.
4. Return the cooked chicken to the skillet, pour the sauce over everything, and stir well. Bring to a boil, reduce heat, and let simmer until the sauce thickens.
5. Mix in cooked rice noodles, making sure they’re fully coated with sauce.
Enjoy this spicy, flavorful dish topped with green onions!
