Blackberry Tres Leches Layer Cake
Cake
1 box yellow cake mix
Ingredients listed on the box, usually eggs, oil, and water
Bake it as two round cake layers according to the package directions. Let both layers cool completely.
Blackberry compote
2 cups blackberries
2–3 tablespoons sugar
A squeeze of lemon juice
Put everything in a saucepan and cook over medium heat until the berries release their juice and soften. Lightly mash them, but leave some berry pieces. Cook until juicy and slightly thickened, then cool.
Tres leches mixture
1 can sweetened condensed milk
1 can evaporated milk
1 cup whole milk
½ teaspoon vanilla
Whisk together. You used about half of this mixture, not the entire amount, because you wanted the cake moist but not collapsed into sweet milk rubble.
Whipped-cream frosting
2 cups cold heavy whipping cream
¼ cup powdered sugar
1 teaspoon vanilla
Whip until firm enough to spread.
Assembly
Place the first yellow cake layer in your dish.
Spread blackberry compote over it.
Place the second cake layer on top.
Spread more blackberry compote over the top.
Use a knife or skewer to make those lines or channels down through the cake, so the milk can travel through both layers instead of sitting uselessly on top.
Slowly pour about half the tres leches mixture over the cake, doing it in stages so it has time to soak in.
Refrigerate until thoroughly chilled, preferably a few hours.
Cover the top with the whipped-cream frosting.
Add extra blackberries and, as you did before, a little honey drizzle over the top.
So the structure was:
