Caprese Stuffed Avocado🥑

Ingredients:

2 ripe avocados

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls, halved

2 tbsp fresh basil, chopped

1 tbsp balsamic glaze

Salt and pepper to taste

1 tbsp olive oil

Directions:

Cut the avocados in half and remove the pits. Use a spoon to scoop out a bit of the flesh from each half to create space for the filling.

In a small bowl, combine the halved cherry tomatoes, mozzarella balls, and fresh basil. Drizzle with olive oil and toss to combine. Season with salt and pepper to taste.

Spoon the Caprese mixture into the hollowed-out avocado halves, pressing gently to pack the ingredients in.

Drizzle balsamic glaze over the stuffed avocados.

Serve immediately, garnished with extra basil if desired.
