4 bone-in pork chops, about 2.5 cm thick

4 cloves garlic, minced
2 tablespoons fresh parsley, chopped
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh oregano, chopped
Zest of 1 lemon
Juice of 1 lemon
60 ml olive oil
1 teaspoon salt
½ teaspoon black pepper

In a medium bowl, combine minced garlic, chopped parsley, rosemary, oregano, lemon zest, lemon juice, olive oil, salt, and black pepper. Mix thoroughly until well incorporated.
Place pork chops in a resealable plastic bag or shallow dish. Pour the herb marinade over the chops, ensuring they are completely coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, ideally 3-4 hours for maximum flavor.
Preheat grill or cast iron skillet over medium-high heat until hot.
Remove pork chops from marinade, allowing excess to drip off. Grill for 4-5 minutes per side until the internal temperature reaches 63°C (145°F).
Transfer cooked pork chops to a plate and let rest for 5 minutes to allow juices to redistribute. Garnish with lemon slices and additional fresh herbs if desired before serving.
Notes
For best results, bring pork chops to room temperature for 15 minutes before cooking.
The marinade can be prepared up to 24 hours in advance and stored in the refrigerator.
