🥕 1 ½ lb carrots, peeled and sliced into sticks

🫒 1 ½ tbsp olive oil

🧂 ½ tsp salt

⚫ ¼ tsp black pepper

🍯 1 tsp honey, optional

🌿 1 tbsp chopped parsley

Mashed potatoes:

🥔 2 lb Yukon Gold or floury potatoes, peeled and chopped

🧂 1 tsp salt, plus extra for boiling water

🧈 4 tbsp butter

🥛 ½ cup warm milk or cream

⚫ ¼ tsp black pepper

Chicken:

🍗 6 bone-in, skin-on chicken thighs

🫒 1 tbsp olive oil

🧂 1 ¼ tsp salt

⚫ ½ tsp black pepper

🌶️ 1 tsp paprika

🧄 3 garlic cloves, minced

🧈 2 tbsp melted butter

🍋 1 tbsp lemon juice

🌿 2 tbsp chopped parsley

Cream sauce:

🧈 1 tbsp butter

🧄 1 garlic clove, minced

🥛 ½ cup heavy cream

🟡 1 tbsp Dijon mustard

🍯 1 tsp honey

🧂 Pinch of salt

⚫ Pinch of black pepper

Instructions 👩‍🍳

Heat the oven. Preheat to 400°F / 200°C and line two baking trays.

Start the carrots. Coat the carrot sticks with olive oil, salt, pepper, and honey. Roast for 30–40 minutes, flipping once, until soft inside and caramelized at the edges.

Prepare the chicken. Dry the thighs well, then season with olive oil, salt, pepper, paprika, garlic, butter, and lemon juice. Arrange skin-side up.

Roast until done. Bake the chicken for 35–45 minutes, until deeply golden and cooked to at least 165°F / 74°C in the thickest part.

Boil the potatoes. Simmer potatoes in salted water for 15–20 minutes, or until they break easily with a fork.

Make the mash. Drain the potatoes, then mash with butter, warm milk or cream, salt, and pepper until creamy.

Prepare the sauce. Cook garlic in butter for 30 seconds, then add cream, Dijon, honey, salt, and pepper. Simmer gently for 2–3 minutes.

Rest and garnish. Let the chicken rest for 5 minutes, then sprinkle with parsley and drizzle lightly with sauce.

Plate the bowl. Add mashed potatoes, roasted carrots, and chicken thighs to each bowl. Serve the remaining garlic mustard sauce in a small cup.
