From personal experience, the preparation demands for Yong Tau Foo are intense and time-consuming. The process begins at around 2 AM at the wet market where fresh fish is bought. Then, the fish is processed and formed into balls, and each Yong Tau Foo piece is carefully filled. By the time all fish balls and fillings are ready, it's usually about 7 AM, but this is just the beginning. Next steps include boiling, washing vegetables, and arranging all ingredients before the shop can open. This extensive preparation is crucial to maintain the quality and freshness that customers expect. Trying to open earlier in the past showed us it’s unsustainable; rushing would compromise the product quality. We appreciate everyone’s understanding that although the opening time may seem late, it allows us to provide you with the best Yong Tau Foo experience possible.
