The original recipe shared here is fantastic for beginners, but I wanted to share a few extra tips and tricks I’ve picked up over the years to really elevate the flavors and make it your own. First, let's talk about the saltfish. The crucial step is desalting. The original mentions boiling for 15-30 minutes, which is perfect. A little trick I use is to change the water at least once, sometimes twice, during that boil to ensure most of the salt is out. You can also soak it overnight in cold water, changing the water a few times, if you prefer a less boiled texture. Once desalted, flake it apart – don't forget to check for any small bones! Now, for the cabbage and other veggies. While steaming is quick and healthy, I often love to sauté my aromatics first to build a deeper flavor base. I start by heating a little oil (coconut oil works wonderfully!) in a pan. Then, I’ll add finely diced Onions, some minced garlic, and thinly sliced Bell pepper. If you like a little kick, this is the perfect time to throw in a tiny piece of a deseeded Scotch bonnet pepper – just be careful, they are potent! I’ll let these soften for a few minutes, then add chopped Tomatoes and let them cook down slightly. This gives the dish a lovely, savory foundation. Only then do I add my shredded Cabbage, stirring it in until it's just tender-crisp. Remember, you don't want it mushy! I might add a dash of my favorite 'all Seasons' seasoning blend at this stage too. For the Dumplings, the recipe mentions making them from flour, which is classic. But have you ever tried incorporating sweet potato into your dumplings? It adds a wonderful sweetness and a slightly different texture. You can boil and mash a small amount of Sweet potato and mix it into your flour and water dough. It’s a game-changer for sweet potato dumplings! For traditional flour dumplings, I always make sure the water is boiling rapidly before dropping them in, and they usually float when they're done. And for the Sweet potato and Yam, boiling them alongside your dumplings is super convenient. Just make sure they're cut into roughly similar-sized pieces so they cook evenly. Once tender, you can enjoy them in their natural form, or for a creamier side, I sometimes mash them lightly with a tiny bit of butter or coconut milk. It complements the savory Saltfish and Cabbage beautifully. This dish is incredibly versatile. Don't be afraid to adjust the spices to your liking. Some people add a pinch of thyme or black pepper.
