Haitian Marinade Recipe

Traditional Haitian Marinade (Fritters) Recipe

Ingredients:

• 2 cups all-purpose flour

• 1 tsp baking powder

• 1 ½ tsp salt

• 1 tsp black pepper

• 1 tsp onion powder

• 1 tsp garlic powder

• 1 tsp dried thyme

• ½ tsp cayenne pepper or crushed red pepper (optional for heat)

• 1 Maggi cube (or 1 tsp bouillon powder)

• 1 small bell pepper, finely chopped

• 1 small onion, finely chopped

• 2 scallions, chopped

• 1–2 cloves garlic, minced

• 1 cup water (adjust for texture)

• ½ cup fresh parsley, chopped

• 1 tbsp epis (Haitian seasoning base – optional but authentic)

• Vegetable oil for frying

Instructions:

1. Mix Dry Ingredients: In a large bowl, mix flour, baking powder, salt, and spices (black pepper, garlic/onion powder, thyme, cayenne, Maggi).

2. Add Veggies: Stir in chopped bell pepper, onion, scallions, garlic, and parsley.

3. Add Wet Ingredients: Mix in the epis and gradually pour in water while stirring until you get a thick batter — like pancake batter.

4. Heat Oil: In a deep pan or pot, heat oil to 350°F (medium-high heat).

5. Fry Marinad: Use a spoon to drop small scoops of batter into the oil. Fry in batches, flipping occasionally, until golden brown and cooked through (about 3–5 minutes per batch).

6. Drain & Serve: Remove from oil, drain on paper towels. Serve warm with pikliz or as a side to griot or fried chicken.
