Pavlova is one of my favourite summer desserts, and it's perfect for hot, dry weather and doesn't require a high oven temperature.

Mini pavlovas are also a naturally gluten-free dessert to boot! This one also skips the whipped cream in favour of lemon curd. It's SO GOOD!
