Ingredients
• Shiitake mushrooms (about 2 cups), cut into small pieces
• 1 medium onion, finely chopped
• 1 medium tomato, chopped
• 2–3 cloves garlic, minced
• 1 teaspoon ginger, minced
• 2–3 chilies (dried red, fresh green, or a mix), chopped
• 1 teaspoon cumin powder
• ½ teaspoon turmeric powder
• ½–1 teaspoon red chili powder (adjust to taste)
• ½ teaspoon garam masala powder
• 2 tablespoons cooking oil
• Salt to taste
• Fresh cilantro, chopped (for garnish)
Instructions
1. Heat oil in a pan over medium heat. Add the chopped onion and sauté until it becomes golden brown.
