Vegan Birria Tacos
Vegan Birria Tacos:
Start by adding one package of dried hibiscus flowers to a mixing bowl .
Add hot water at 180F and let the flowers soak to open up the flowers for 15-20 minutes each time. You’ll do this twice.
During the second time you soak with water you’ll add 2 tbsp apple cider vinegar. Let soak for 15-20 minutes.
Rinse with the third and final time with cold water. Place your hand in the bowl in a circular motion and throughly clean the flowers .
Next make the birria sauce .
Birria Red Sauce Ingredients:
Start by boiling a pot of water add in 4 carrots , 4-6 small bay leaves ,1 large white or brown onion , 6 dry California chile pods , 6 dry Guajillo peppers , 6 cloves of garlic , 2 Tbsp (vegan) chicken bullion
Once all items in your pot are soft add to a blender. Place the bay leaves to the side you’ll use them later . Use the water from the pot in the blender to get a smooth sauce .
Place the sauce back into the pot and turn it on a medium heat . Add in the hibiscus flowers . Place the bay leaves back into the pot with the sauce and the hibiscus. Let it simmer for 20-30 minutes until everything is combined . Personally I think the longer it’s in the sauce the better . Next day the dish is even better than day one ☺️you can store in the fridge or make this large batch and freeze it.
Hey foodies! So, you've got this amazing vegan birria sauce simmering, and trust me, you're in for a treat! While the original recipe gives you a fantastic foundation for your Vegan Birria Tacos, I've got a few extra tips and tricks I've picked up along the way to make your sauce, and your whole meal, truly unforgettable. First, let's talk about those dried chiles – the Guajillos and California chiles. The recipe tells you to boil them, which is perfect for rehydrating, but if you want to unlock an even deeper, more complex flavor profile for your vegan birria sauce, try this: lightly toast them in a dry pan for about 30 seconds to a minute before adding them to the boiling water. Just until they're fragrant, but be careful not to burn them, or they'll turn bitter. This small step makes a huge difference in the richness of your sauce, giving it that authentic, smoky depth. Another thing I've learned about the sauce: don't rush the simmer! The recipe suggests 20-30 minutes, which is good, but I often let my vegan birria sauce simmer for 45 minutes to an hour, or even longer on low heat. The magic truly happens when all those flavors from the hibiscus, chiles, and aromatics have ample time to meld and develop. That's why the recipe mentions it tastes even better the next day – the longer it sits, the more profound the flavors become. So, if you have the time, let it get happy on the stove! Now, beyond just the incredible sauce, let's talk about building the ultimate Vegan Birria Tacos. The hibiscus 'meat' is fantastic, but you can also experiment with other fillings. I sometimes add seasoned, sautéed mushrooms, shredded jackfruit, or even crumbled firm tofu alongside the hibiscus for extra texture and protein. For the tortillas, definitely use corn! Dipping them in that rich birria broth before grilling them on a hot griddle is non-negotiable for achieving that perfect crispy-yet-chewy texture. And don't forget the classic toppings: finely diced white onion, fresh cilantro, and a generous squeeze of lime juice perfectly cut through the richness of the sauce. Sometimes I even add a dollop of vegan sour cream or a sprinkle of vegan cotija cheese for an extra layer of deliciousness. And what about using your amazing vegan birria sauce beyond traditional tacos? Oh, the possibilities! My absolute favorite is vegan quesabirria. Just like the tacos, dip a tortilla in the sauce, fill it with your hibiscus birria mix and some melty vegan cheese, then grill until golden and gooey. Serve with extra sauce for dipping – pure heaven! You can also use this incredible sauce as a base for hearty burritos, as a topping for a rice and bean bowl, or even as a flavorful broth for a spicy ramen. It’s incredibly versatile. Finally, let's talk storage. The recipe is spot on about the sauce being even better the next day. I always make a large batch because it freezes beautifully. Store it in airtight containers or freezer-safe bags, and you'll have delicious vegan birria sauce ready whenever a craving hits. Thaw it overnight in the fridge or gently reheat on the stove. This way, you're always just minutes away from assembling incredible Vegan Birria Tacos or whipping up another birria-inspired meal!
