Albondigas

Ingredients:

For the meatballs (Albondigas):

- 1 lb ground beef (or a mix of beef and pork)

- 1/4 cup cooked rice (or breadcrumbs)

- 1/4 cup fresh cilantro, chopped

- 1/4 cup onion, finely chopped

- 1 egg

- 2 cloves garlic, minced

- 1 tsp ground cumin

- 1/2 tsp ground cinnamon

- 1 tsp paprika

- 1/2 tsp salt

- 1/4 tsp black pepper

For the soup:

- 1 tbsp olive oil

- 1 medium onion, chopped

- 2 cloves garlic, minced

- 2 medium tomatoes, chopped (or 1 can diced tomatoes)

- 1 medium carrot, peeled and sliced

- 2 medium potatoes, peeled and diced

- 6 cups beef or chicken broth

- 1 tsp ground cumin

- 1/2 tsp dried oregano

- 1-2 bay leaves

- 1 cup zucchini, chopped

- 1/2 cup corn kernels (optional)

- Salt and pepper, to taste

- Fresh cilantro, for garnish

- Lime wedges (optional)

### Instructions:

1. Prepare the meatballs (Albondigas):

In a large bowl, mix together the ground meat, cooked rice (or breadcrumbs), cilantro, onion, egg, garlic, cumin, cinnamon, paprika, salt, and pepper. Once well combined, shape the mixture into small meatballs (about 1 inch in diameter) and set them aside.

2. Cook the soup base:

In a large pot, heat olive oil over medium heat. Add the chopped onion and cook for about 5 minutes, until softened. Add the minced garlic and cook for another minute.

3. Add tomatoes and seasonings:

Stir in the chopped tomatoes, cumin, oregano, and bay leaves. Cook for 5-7 minutes until the tomatoes soften and release their juices.

4. Add broth and vegetables:

Pour in the broth and bring to a boil. Add the carrots, potatoes, and zucchini. Lower the heat to a simmer and cook for 10-15 minutes, until the vegetables begin to soften.

5. Cook the meatballs:

Gently add the prepared meatballs to the pot. Simmer for 20-25 minutes, or until the meatballs are cooked through and the vegetables are tender.

6. Season and serve:

Add corn (if using) in the last 5 minutes of cooking. Taste the soup and adjust seasoning with salt and pepper as needed. Remove the bay leaves.

7. Garnish and serve:

Ladle the soup into bowls, garnish with fresh cilantro, and serve with lime wedges on the side for an extra burst of flavor.
