Asian Noodle Salad🥭🥑

One of my favorite salads🤌🏻 Colorful, refreshing and packed with flavor. I love the peanut butter dressing!🥜

Ingredients:

• 1 bundle (90gr) of udon noodles

• 1 cup of shredded green cabbage

• 1 carrot, shredded

• 2 green onions, chopped

• 1/4 cup of chopped cilantro

• 1/2 cup of chopped cashews or peanuts

• 1 mango, diced

• 1 avocado, diced

• 2-3 tbsp of sesame seeds (optional)

• You’re favorite protein of choice, I used shrimp

For the dressing:

• 1/2 cup of creamy peanut butter

• 2 tbsp of low sodium soy sauce

• 2 tbsp of rice vinegar

• 1 tbsp of sriracha

• 3 tbsp of maple syrup

• 1 tsp of grated ginger

• 1 tbsp of lime juice (half a lime)

• 1/4 cup of water (add slowly until reach desired consistency, maybe you will need less)

Instructions:

1. Cook the noodles according to the package instructions. Once cooked, drain and set aside.

2. In a large bowl, combine the chopped cabbage, shredded carrots, diced avocado, diced mango, chopped cilantro, chopped green onions, chopped cashews and sesame seeds.

3. In a small bowl, whisk together the creamy peanut butter, soy sauce, rice vinegar, maple syrup, sriracha, grated ginger, lime juice. Slowly incorporate the water until reach desired consistency.

4. Add the cooked and cooled noodles to the bowl of vegetables. Pour the dressing over the noodles and vegetables. Toss everything together until well combined and evenly coated with the dressing.

5. Add your protein of choice, I used shrimp. Toss until well combined.

6. Serve immediately, garnish with more sesame seeds and enjoy!
