Lazy meal: Kimchi Fried Rice

Ingredients:

- Kimchi

- Rice

- Veggies (i used sprouts and carrots)

- Garlic

- Pepper, salt

- Seaweed, sesame seeds (this is optional but it makes a difference)

- Egg

This recipe is so easy to make and prep:

1. While the rice is cooking, chop your garlic and veggies. Over here I cooked 1 cup of rice, enough for 2 portions.

2. When your rice is almost done, stir fry your veggies at low heat. Add 2 tablespoons of minced garlic.

3. Add your favourite kimchi (i use Bibigo). Ratio: 1 cup of rice to 4-5 tablespoons of kimchi. Your rice should look reddish after mixing (image 4).

4. Taste and season with salt, pepper, and 1 teaspoon of sesame oil (can skip if you dont have it).

5. Most important is the salted seaweed. Crush them and add it in. Makes a diff in the taste.

6. If you have gochugaru spice, can sprinkle some for it to be more spicy.

Eat well. Be well. 😉

... Read moreKimchi fried rice is one of those comforting dishes that you can whip up in no time, perfect when you want something flavorful without spending hours in the kitchen. I also love how adaptable this recipe is; you can easily swap in whatever veggies you have on hand, like bell peppers, onions, or even mushrooms, to boost both flavor and nutrition. The addition of salted seaweed and sesame seeds adds a subtle crunch and umami that really makes the dish stand out. For those who enjoy a bit of heat, sprinkling some gochugaru or even a dash of Sriracha can elevate the dish to another level. I often like topping my kimchi fried rice with a perfectly fried egg, which drapes over the warm rice and adds a rich, creamy texture when broken. When preparing the rice, slightly drying it out beforehand or using leftover rice from the fridge helps prevent clumping and achieves the ideal stir-fried texture. Another tip is choosing kimchi with a good balance of sourness and spice; it impacts the overall flavor greatly. Brands like Bibigo are convenient and tasty, but homemade kimchi is fantastic too if you have it. The process of stir-frying the garlic and veggies gently over low heat ensures they remain tender yet flavorful. Finally, this dish is great for meal prep since it keeps well and reheats nicely, making it a convenient option for busy weekdays.
