I wanted to try brown rice in the rice cooker. I added quinoa and frozen veggies to the pot as well.
Ingredients
1 cup brown rice, rinsed
3 tbsp quinoa, rinsed
1.25 cup water or broth
2 cups veggies, fresh or frozen
* I used edamame, onions, cauliflower, broccoli, carrots, corn, peas, etc.
Sauce to taste
* I used soy sauce, oyster sauce, sesame oil, rice wine vinegar, and Sriracha or sweet chili oil.
Directions
1. Add rinsed grains, water, and top with veggies and sauce.
2. Hit the brown rice setting or run the one-touch cooker twice.
Makes a lot, I had 4 meals worth. I topped with a little more sesame oil, sesame seeds, and chopped parsley (but I wish I had green onions).

Brown rice, known for its nutty flavor and higher fiber content compared to white rice, pairs well with quinoa, a protein-rich seed, creating a wholesome base for any meal. Adding a variety of frozen or fresh vegetables like edamame, broccoli, carrots, and peas not only boosts the nutritional value but also adds texture and color to the dish.
The convenience of a one-pot rice cooker meal is further enhanced by versatile sauces such as soy sauce, oyster sauce, sesame oil, and rice wine vinegar, which bring depth and layers of flavor. Spicy elements like Sriracha or sweet chili oil can be adjusted based on personal preference to add a satisfying kick.
This recipe is especially useful for meal prepping as it yields multiple portions that can be refrigerated or frozen for future meals. Topping the dish with sesame seeds, chopped parsley, or green onions adds freshness and appealing garnish.
For those looking to customize, experimenting with different veggies and protein additions such as tofu or chicken can transform this basic recipe to fit various dietary needs. Moreover, using broth instead of water enhances the flavor profile.
Overall, rice cooker meals like this are practical, nutrient-dense options that simplify cooking without sacrificing taste or health benefits.
