🍫☕️Mocha Dream Brownie Cake
Ingredients
For the Brownie Layers
1 cup (2 sticks) unsalted butter
1 ½ cups granulated sugar
1 cup packed brown sugar
4 large eggs
2 tsp vanilla extract
1 cup all-purpose flour
1 cup unsweetened cocoa powder
1 tsp instant coffee or espresso powder
½ tsp salt
For the Coffee Filling
1 cup granulated sugar
¼ cup water
4 tbsp unsalted butter
¾ cup heavy cream
1 ½ tsp instant coffee or espresso powder
Pinch of salt
For the Coffee Frosting
1 cup unsalted butter, softened
3 ½ cups powdered sugar
3 tbsp heavy cream (or milk)
2 tsp instant coffee or espresso powder, dissolved in 1 tbsp hot water
1 tsp vanilla extract
For Garnish
½ cup semisweet chocolate chips or melting chocolate
Optional: chocolate-covered espresso beans or cocoa powder for dusting
Instructions
1. Bake the Brownie Layers
1. Preheat oven to 350°F (175°C).
2. Line a 9×13-inch baking pan with parchment paper and lightly grease.
3. In a large saucepan, melt butter. Stir in both sugars until smooth.
4. Whisk in eggs and vanilla until glossy.
5. Sift in flour, cocoa powder, instant coffee, and salt. Stir until just combined.
6. Pour half the batter into the pan and spread evenly.
7. Bake for 16–18 minutes, until just set.
8. Let cool slightly, then carefully lift it out onto parchment (you’ll layer later).
9. Pour the remaining half of the batter into the same pan and bake again for another 18–20 minutes.
10. Cool both brownie layers completely.
2. Make the Coffee Filling
1. In a medium saucepan, combine sugar and water over medium heat.
2. Let the mixture cook without stirring until it turns a deep amber color.
3. Remove from heat, add butter (it will bubble). Stir until melted.
4. Slowly whisk in the cream, then add instant coffee and salt.
5. Let cool until thickened but spreadable (about 20–30 minutes).
3. Make the Coffee Frosting
1. Beat butter until light and fluffy.
2. Add powdered sugar gradually.
3. Mix in heavy cream, dissolved coffee, and vanilla.
4. Beat until smooth and creamy.
4. Assemble the Cake
1. Place one brownie layer back into the 9×13 pan or on a serving tray.
2. Spread a thick layer of coffee filling evenly on top.
3. Gently place the second brownie layer on top.
4. Frost the top and edges with coffee frosting.
5. Drizzle melted chocolate in thin, overlapping lines across the top for a café-style look.
6. Chill for at least 30 minutes before slicing to set the filling and frosting.
Optional Garnish
Sprinkle lightly with cocoa powder or powdered sugar.
Top each slice with a coffee bean or swirl of whipped cream.
Storage
Refrigerate covered for up to 5 days — it tastes even better on day two as the coffee flavor deepens.
