If you're anything like me, you love Mexican food, and these crispy, savory rolls filled with seasoned shrimp are an absolute game-changer. I used to think making flautas at home was complicated, but trust me, it’s much simpler than you think and they taste just like your favorite Mexican restaurant. I promise you'll want to add this to your regular rotation! What I love most about these seafood flautas is how versatile they are. You can serve them as a main dish with some rice and beans, or make them a fun appetizer for your next gathering. The key is getting that perfect crispy shell and a flavorful, juicy shrimp filling. I've experimented with a few variations, and I've found a way to make them not only delicious but also pretty quick to prepare. My Go-To Shrimp Flautas Recipe (Flautas de Camarón) Here’s how I make these irresistible crispy shrimp flautas. This recipe is designed to be straightforward, so even if you're new to making Mexican shrimp recipes, you'll nail it! Ingredients: 1 lb medium shrimp, peeled, deveined, and finely chopped 1 tablespoon olive oil 1/2 onion, finely diced 2 cloves garlic, minced 1/2 bell pepper (any color), finely diced 1/2 cup cream cheese, softened 1/4 cup chopped fresh cilantro 1/2 teaspoon chili powder 1/4 teaspoon cumin Salt and pepper to taste 12-15 corn tortillas Vegetable oil for frying (or cooking spray for baking/air frying) Optional toppings: sour cream or Mexican crema, salsa, guacamole, shredded lettuce, cotija cheese. Instructions: Prepare the Shrimp Filling: In a large skillet, heat olive oil over medium heat. Add the diced onion and bell pepper and sauté for about 3-5 minutes until softened. Season with salt and pepper to your liking. Warm the Tortillas: This step is crucial for preventing the tortillas from breaking. Briefly warm the corn tortillas in a microwave (about 15-20 seconds for a stack of 5) or by quickly dipping them in warm water. They should be pliable. Assemble the Flautas: Take one warm tortilla and place a spoonful (about 1-2 tablespoons) of the shrimp mixture near one edge. Roll the tortilla up tightly to form a flauta. Secure with a toothpick if needed (I usually don't, but it helps if you're new to this!). Repeat with the remaining tortillas and filling. Cook the Flautas: Frying (My Favorite for Crispy Flautas): Heat about 1 inch of vegetable oil in a deep skillet over medium-high heat. Once hot, carefully place the flautas seam-side down into the oil. Fry for 2-3 minutes per side, or until golden brown and crispy. Don't overcrowd the pan. Remove with tongs and place on a paper towel-lined plate to drain excess oil. Baking (Healthier Option): Preheat your oven to 400°F (200°C). Lightly brush or spray the assembled flautas with vegetable oil. Place them on a baking sheet and bake for 15-20 minutes, flipping halfway, until golden and crispy. Air Frying: Preheat your air fryer to 375°F (190°C). Lightly spray the flautas with oil. Arrange them in a single layer in the air fryer basket. Air fry for 8-12 minutes, shaking the basket halfway, until crispy and golden. Serve: Remove toothpicks if you used them. Serve your hot and crispy shrimp flautas immediately with your favorite toppings like a dollop of sour cream or crema, a fresh salsa, creamy guacamole, or a sprinkle of cotija cheese.
