Ep2 Water Stock Making
It's been a long time since the end of EP.1! I really apologize to my friends for leaving it for a long time, but I can say that during the disappearance, I didn't go far, but secretly went to "practice making stock water," simmering pot soup after pot until the most suitable recipe. The first intention was to make it healthy, but after making it, the taste was so wow that I had the opportunity to "try to sell" seriously! Today, when everything is still and confident in the taste, I want to come back to EP.2 and tell you what I learned in this form of clear, fragrant and sweet vegetable stock.
In the pot that my friends see here is a carefully washed broth bass, and there is a great technique that I discovered by trying to sell it:
White lettuce sweetness: I chose a large piece of white lettuce as my base to make the broth sweet and clean.
The trick to making hair soup different from other places is to roast the onion to make small burns (as observed in the picture). This will bring out the deep aroma and sweet taste, making the broth more dimensional.
Umami from fragrant mushrooms: I added fragrant mushrooms to the natural mellow without MSG.

ในการทำ "น้ำสต๊อกผัก" นอกจากจะใช้วัตถุดิบคุณภาพแล้ว เทคนิคการเตรียมและกรรมวิธีก็มีผลสำคัญมากครับ ผมเองเคยทดลองใช้ผักหลายชนิด เช่น แครอท เซเลอรี่ และหัวหอมแดง แต่พบว่าผักกาดขาวให้ทั้งความหวานและความใสของน้ำสต๊อกที่ดีที่สุด โดยเฉพาะเมื่อล้างทำความสะอาดอย่างละเอียดก่อนใช้ก็ช่วยลดความขมและกลิ่นแรงของผักได้มาก หลายครั้งที่ผมลงมือคั่วหอมหัวใหญ่จนเกิดรอยไหม้เล็กๆ ก่อนนำไปต้ม น้ำสต๊อกจึงมีความหอมหวานลึกขึ้นอย่างเห็นได้ชัด ความคั่วนี้ไม่เหมือนการเผาไหม้เสียหาย แต่เป็นการปล่อยน้ำตาลในหอมหัวให้ออกมาแบบคาราเมล เพิ่มมิติรสชาติอย่างประหลาดใจ เห็ดหอมแห้งที่แช่น้ำจนพอคืนรูปและนำมาใส่ในหม้อซุป ก็ช่วยเสริมรสอุมามิแบบธรรมชาติ โดยไม่ต้องเติมผงชูรส ทำให้น้ำซุปมีรสชาติกลมกล่อมขึ้นและเหมาะมากสำหรับคนที่ใส่ใจเรื่องสุขภาพ ถ้าจะให้แนะนำเพิ่ม ก่อนต้มผักลองใส่กระดูกไก่หรือหนังไก่เล็กน้อยก็ช่วยเพิ่มความกลมกล่อมครับ แต่ถ้าต้องการน้ำซุปวีแกนล้วนๆ ก็ใช้ผักและเห็ดหอมนี่แหละ ยืนหนึ่งเรื่องความอร่อย! อีกเรื่องคือเวลาเคี่ยวน้ำสต๊อก ควรใช้ไฟกลางค่อนไปทางอ่อนและเคี่ยวนานหน่อยประมาณ 1-2 ชั่วโมงเพื่อดึงรสชาติจากผักออกมาได้เต็มที่ สุดท้าย ผมอยากแนะนำให้เพื่อนๆ ทดลองปรับส่วนผสมและขั้นตอนเล็กๆ น้อยๆ ให้เข้ากับรสชาติที่ชอบ เพราะน้ำสต๊อกเป็นหัวใจของหลายเมนู เช่น ซุป ราเมน หรือแกง ที่จะเปลี่ยนรสชาติของเมนูจานนั้นๆ ให้โดดเด่นและกลมกล่อมมากขึ้น การทำซุปน้ำสต๊อกด้วยใจและความตั้งใจจะทำให้ได้ซุปที่ "ว้าว" เหมือนที่ผมพบเจอแน่นอนครับ ขอให้สนุกกับการลองทำและค้นหาเอกลักษณ์น้ำซุปของตัวเองนะครับ!
