1 3/4 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/2 cup (1 stick) unsalted butter, softened
3/4 cup smooth peanut butter
1/2 cup brown sugar
1/4 cup granulated sugar, plus more for rolling
1 large egg
2 Tbsp. milk
1 tsp. pure vanilla extract

* Preheat oven to 375°. Line 2 large baking sheets with parchment. In small bowl, whisk flour, baking soda, and salt until combined.
* Step 2
In a large bowl, using a hand mixer, beat butter and peanut butter until smooth. Add brown sugar and granulated sugar and beat until light in color and fluffy. Beat in egg, then add milk and vanilla and beat until combined. Gradually add dry ingredients; beat on low speed until just combined.
* Step 3
Pour some granulated sugar onto a plate. Roll 2 Tbsp. dough into a ball, then roll in sugar. Arrange on prepared sheet. Repeat with remaining dough, make sure to space them out!
* Step 4
Bake cookies until puffed and no longer look raw, 8 to 10minutes. (They won’t brown!)
