💕Busy Mom Meals on a Budget! Tonight's comfort plate features savory pepper steak and rich gravy over a bed of extra long grain rice, paired with pan-fried corn and mac and cheese. Total cost came out to $21.18, fed my family of four, and we still had leftovers!
💕Instructions
🩷Beef: 3 packs of beef bottom round steaks, cut thinly into strips
🩷Rice: Extra long grain rice (such as La Preferida)
🥣 Liquids & Broth Base:
✨Beef-flavored Better Than Bouillon
✨Soy sauce (La Choy)
✨Worcestershire sauce
🥕 Vegetables & Blends:
✨Frozen stir fry vegetable blend (green beans, broccoli, onions, mushrooms)
✨Frozen fajita blend (onions, red peppers, green peppers)
🧂 Seasonings:
Minced 🧄
All-purpose seasoning ("The Works" - garlic, onion, pepper, salt)
Smoked paprika
Parsley flakes
✨Instructions
1. Prepare the Rice: Rinse the extra long grain rice thoroughly. Cook the rice according to package instructions until fluffy and set aside as the base of your dish.
2. Slice and Season the Beef: Take your beef bottom round steaks and cut them up thinly into strips. Season the meat with minced garlic, all-purpose seasoning ("The Works"), smoked paprika, and black pepper, and Sazon
3. Brown the Meat: In a large pot or skillet, sear the seasoned beef strips over medium-high heat until nicely browned.
4. Make the Gravy Base: Mix a spoonful of beef-flavored Better Than Bouillon with warm water to create your broth. Pour it into the pot with the beef, along with splashes of soy sauce and Worcestershire sauce to build a rich, savory gravy. For thicker sauce, you can also use a little bit of cornstarch to make it more into a gravy if needed can you tell out.
5. Add Vegetables: Toss in your frozen stir-fry and fajita vegetable blends (featuring onions, peppers, green beans, broccoli, and mushrooms) directly into the beef and gravy mixture.
6. Simmer: Let everything simmer together on medium-low heat until the beef is tender and the sauce reduces into a thick, savory gravy.
7. Serve: Spoon the hot pepper steak and rich gravy generously over a bed of your cooked extra long grain rice.
🌽 Spicy Parmesan Pan-Fried Corn:
.1 Thaw and drain your frozen corn, then sear it in a hot buttered skillet over medium-high heat until it develops a golden-brown char.
2.In a separate pan, melt butter with minced garlic, add your choice of heat (like hot sauce or chili flakes)pour in a splash of heavy cream, and stir in Parmesan cheese until smooth.
3. Toss the charred corn directly into the creamy spicy sauce and sauté until bubbling and well-coated.
Poor Mac 🧀
.1 Upgrade the Base: Start with a standard boxed mac and cheese as your quick foundation, but throw out or bypass the basic packet instructions.
.2 Richer Dairy: Melt in extra butter and swap regular milk for heavy cream or evaporated milk to create a thick, velvety sauce base.
.3 Melt Extra Cheese: Stir in a generous handful of freshly shredded sharp cheddar, Monterey Jack, or your favorite melting cheeses right into the warm pasta until completely smooth and stretchy.
.4 Season to Taste: Elevate the flavor profile by adding a pinch of garlic powder, onion powder, black pepper, and smoked paprika or a dash of your favorite seasoning blend.
All of these things were found either in my kitchen and everything I had to buy, came up to the price that I stated before. Again this day, my family of four and we still have leftovers for the next day. There should be no reason why we can’t eat around.
