Allllllll the veggies that go under my roast chicken
Meal prepping is a fantastic way to save time during busy weekdays and ensure you get nutritious meals without hassle. One of my favorite meal prep tricks is roasting a variety of vegetables underneath a whole chicken. As the chicken cooks, its juices seep into the veggies, enhancing their flavor and creating a rich, savory side dish. When preparing veggies to roast under your chicken, I usually choose hearty options like carrots, potatoes, onions, and sometimes Brussels sprouts or parsnips. These veggies hold up well during the long cooking process and absorb the delicious chicken flavors. I like to cut them into uniform pieces to ensure even roasting. Before placing the veggies under the chicken, I season them with a bit of olive oil, salt, pepper, and herbs such as rosemary or thyme. This combination complements the chicken perfectly and adds depth to the meal. Placing the veggies on the bottom of the roasting pan also means they get nicely caramelized from the heat and chicken drippings. This method is excellent for meal prep because once the chicken and veggies are done, you can portion them out into containers for several days. The leftovers reheat well, and the flavor only gets better after sitting together. Plus, roasting everything in one pan reduces cleanup time.
