Made curry chicken the other day for the family and wow… this dish really takes some effort but SO worth it ❤️
🛒 Ingredients you’ll need (it’s a long list but trust me!):
• Chicken 🍗
• Potatoes 🥔
• Galangal
• Young ginger
• Turmeric
• Dried chilli 🌶️
• Chili padi 🌶️🔥
• Red chilli
• Lemongrass
• Candlenut
• Shallots & onions
• Garlic
• Cumin seeds
• Coriander seeds
• Meat curry powder (must-have!)
• Curry leaves 🌿 (I bought them but forgot to add them into the dish 😂)
• Coconut milk (I swear by Ayam Brand 🥥💯)
The steps are honestly pretty simple:
1. Blend your spice paste (all the aromatics + dried chilli + candlenut + cumin + coriander).
2. Fry the paste till fragrant.
3. Add chicken pieces + curry powder, stir till coated.
4. Add water and potatoes, simmer till everything cooks through.
5. Stir in coconut milk at the end for that creamy finish 🥥✨
💡 Pro tip: Let the curry sit for 30 mins before serving — the flavours deepen and it’s next level. (Also better the next day!)

Typically, a serving of homemade curry chicken with potatoes and coconut milk ranges from 150-200 calories per 100g. This is because coconut milk adds creaminess but also fat content.
To enjoy your curry chicken while keeping an eye on calories, consider adjusting the amount of coconut milk or using light coconut milk alternatives. Including more vegetables or leaner cuts of chicken can also reduce caloric density.
I remember blending fresh spices like galangal, turmeric, and cumin seeds, and frying the spice paste till fragrant made a huge difference in flavor. The patience it took to simmer everything together truly rewarded me with a delicious and aromatic dish. The leftover curry tastes even better the next day, and knowing the calorie count helped me balance my meal planning.
Overall, making curry chicken from scratch is a wonderful culinary experience that combines traditional spices and cooking techniques. Tracking its nutritional values like calories ensures a mindful, tasty meal that you can enjoy with your family or friends without guilt.
