Kerala Style Prawn Roast Recipe (Chemmeen Roast)

Ingredients:
For marination:
• 500g prawns (cleaned & deveined)
• ½ tsp turmeric powder
• 1 tsp red chili powder or Kashmiri chilli powder for mild
spicy.
½ tsp coriander, garam masala
• Salt - to taste
• 1 tbsp lemon juice
• Crushed ginger, garlic and coriander
• Curry leaves
For the roast:
• 2 tbsp coconut oil (for authentic flavor)
shredded coconut
Fresh coriander or more curry leaves - for garnish
(optional)
Instructions:
1. Marinate the prawns with turmeric, chili powder, coriander powder, garam masala, salt, coconut milk, curry leaves, crushed ginger, garlic and lemon juice. Let it rest for 15-20 minutes.
1 In a pan, heat coconut oil or olive oil.
2. Now add the marinated prawns. Stir and cook on medium-high heat. Prawns will release some water-cook until they are well coated and the masala turns dry and roasted (about 7-10 minutes).
