• 1 cup bajri (pearl millet) flour
• 1 cup water
• 1 tsp oil
• Salt to taste

1. Boil Water:
In a pot, add 1 cup water, 1 tsp oil, and salt. Bring to a boil.
2. Add Bajri Flour:
Sift 1 cup bajri flour (to remove lumps) and add it to the boiling water.
Mix well immediately to combine.
3. Steam the Mixture:
Reduce the heat to low, cover the pot with a lid, and let it cook for 10 minutes.
4. Prepare the Dough:
Transfer the hot mixture to a flat plate or parat.
Knead while warm (careful — use wet hands or spoon first).
Knead until dough becomes soft and smooth.
Adjust with more flour or warm water if needed.
5. Shape the Bhakris:
Divide the dough into equal balls.
Dust with bajri flour and gently roll each ball into a round bhakri.
(If it doesn’t form a perfect circle, use a steel plate with sharp edges to cut a round.)
6. Cook the Bhakris:
Heat a tawa well. Place the bhakri and cook one side on low to medium heat for 30 seconds.
Flip and cook the other side for 30 seconds.
Flip again and press gently with a cloth or spatula to help it puff.
Cook until both sides have light brown spots and it’s fully done.
7. Serve Hot:
Enjoy with thecha, pithla, bharli vangi, chutney, curd, or jaggery with ghee.
