Tomato Risotto Recipe 🍅

Just finished Culinary Class Wars S1 and were inspired by Napoli Matfia to perfect our risotto skills. We’ve made risotto before but this time we tried something new with a tomato base. And it was definitely the best risotto we’ve ever made! Thank you @lonolife for the delicious chicken broth!

Ingredients:

• 4 packets lonolife chicken broth + 40 oz hot water

• 1 cup arborio rice

• 1 pack cherry tomatoes

• 1 tbsp tomato paste

• 3 cloves garlic, minced

• 1 shallot, chopped

• 1/2 cup parmesan cheese

• salt

• red pepper flakes

• fresh basil

• 2 tbsp unsalted butter (optional)

Directions:

1. Heat the chicken broth on the stove. Keep warm but not boiling

2. Sauté shallots and garlic in a pan until fragrant

3. Add in red pepper flakes and the cherry tomatoes and heat until softened

4. Add in the tomato paste and mash everything together

5. Mix in the rice until evenly coated with tomato

6. Pour in 1/2 cup of broth, bring to a simmer, and slowly stir together until it has been mostly absorbed (about 5 minutes)

7. Repeat until one scoop of broth left or reach desired consistency

8. Stir in parmesan cheese, butter, and remaining broth and salt to taste

9. Serve with fresh basil, roasted tomatoes, and your choice of protein
