Pairing your ribs with smashed potatoes is a great choice because they offer a creamy yet textured side that soaks up all the delicious BBQ juices. To make smashed potatoes, I boil baby potatoes until tender, then gently smash them and roast with olive oil, garlic, and herbs like rosemary or thyme for a crispy finish. Creamy corn bake is another fantastic side that balances the meal with its rich and slightly sweet flavor.
