🌮 Cheesy Rotel Tacos for Taco Tuesday
Ingredients:
1 lb (450 g) ground beef (80/20 for juiciness)
1 can (10 oz) Rotel tomatoes with green chilies, drained
1 packet taco seasoning (or homemade blend)
½ cup water
1 cup shredded cheddar cheese (or Mexican blend)
8–10 taco shells (hard or soft)
Optional toppings: diced tomatoes, onions, cilantro, sour cream, jalapeños, extra cheese
Instructions:
Cook the beef
Heat a skillet over medium-high heat. Add ground beef, cook while breaking it up with a spoon until browned and no pink remains. Drain excess fat if needed.
Season & add Rotel
Stir in taco seasoning and water. Simmer for 2–3 minutes until thickened. Add drained Rotel tomatoes and stir well.
Make it cheesy
Lower heat and mix in shredded cheddar until melted and creamy.
Prepare shells
Warm taco shells according to package directions (oven or microwave).
Assemble tacos
Spoon the cheesy beef mixture into each shell. Top with your favorite toppings — tomatoes, onion, cilantro, sour cream, jalapeños, or extra cheese.
Serve hot
