Swamp Soup

Ingredients
- 1 pack of 4.2 lbs chicken thighs
- 8 cups of water (for chicken boil)
- 1/2 cup chicken bouillon
- 2 cups cooked rice
- 5 garlic cloves
- 3 inch piece of fresh ginger
- 4 green onions (white and green parts)
- 2-3 jalapeños (seeds removed or leave in for the heat)
- 2 cups of fresh parsley
- 1 cup cilantros
- 2 handful of spinach
- 1 lime (juiced)
- Salt or all purpose seasoning
- 1 tsp black pepper
- Soy sauce to taste
Directions
- In a pot add 8 cups of water with a half cup of chicken bouillon and the chicken thighs. Boil chicken until well done. Remove chicken immediately and set aside to cool down. Break down the chicken into shreds, remove the bones and discard them.
- With the remaining broth from the chicken bring back to a boil and add the spinach, cook until spinach is wilted then remove with tongs, transfer to blender. Set aside.
- Add the rice to the chicken boil broth. Bring back to a boil, then reduce the heat to simmer for 10-15 minutes.
- Add the garlic, ginger, green onions, jalapeños, cilantros and parsley to the blender with the spinach. Blend for about 60 seconds until very smooth.
- Add the chicken into the broth with 1/2 of the blended green purée mixture. Give it a taste check before hand then add the rest of the purée. You may also add more seasoning to your likings.
- Remove from heat and add the fresh lime juice.
- Serve with soy sauce, extra parsley, jalapeños, cilantros and lime wedges for garnish. Enjoy!
Note: You can use a pre-cooked rotisserie chicken instead of boiling a package of chicken to cut down on the time. Rotisserie chicken has a good flavoring when added to soup.
