Marinated White Bean Salad
2 cups of your favorite bean I use white beans here
1/4 cup to 1/2 cup of EVOO start with 1/4 cup
2 teaspoon teaspoons of salt
1 tablespoon of sugar
3/4 cup of your favorite herbs fresh
A tablespoon of your favorite dried herbs for seasoning
2 to 3 shallots
Half cup of sun-dried tomatoes
Two whole lemons, juiced and zest
Salt and pepper
Seasoned to taste this recipe to your satisfaction. You can add fresh corn or fresh garlic, bell peppers but this is an amazing base make it your own.
