AMAZING FLAVORFUL GREEK SALAD — SIMPLE AND EASY
I went through a phase last year where I ate this 5 days a week and alternated between adding different types of protein — it’s THAT good. You can customize this however you’d like to suit your taste/dietary needs. I usually pair with protein for a high protein salad unless im eating it as a quick snack. I eyeball everything when i make this except when it comes to the vinaigrette i only use one tbsp of olive oil for a single serving.
Ingredients:
- Grape Tomatoes, Cherry Tomatoes (highly recommend flavor Bombs if you opt for cherry) OR Campari Tomatoes (which is what i usually use when i can’t find good cherry tomatoes, and *what i used in this recipe)
- Kalamata Olives (i sometimes do kalamata + green olives or castelvetrano olives which are my favorite)
- Red (purple🤨) Onion
- English Cucumber
- Red Bell Pepper (chopped small)
- Feta Cheese (can be left out if you don’t do dairy, i opt out often! but it is amazing with feta)
**Optional: Protein of choice
Vinaigrette:
- Extra Virgin Olive Oil (1 Tbsp)
- Red Wine Vinegar
- Fresh Garlic (chopped/minced)
- Ground Black Pepper
- Dried Oregano
- Dried Basil
- Lemon Juice
- Dijon Mustard (optional but i highly recommend)
**TIP: the longer you let the vinaigrette marinate the better it tastes. i recommend making the vinaigrette first and letting it sit for a bit before you start preparing the actual salad etc. but either way i’ve used it freshly made without letting it sit and it is still good. but sometimes things are best ✨marinated✨— which brings me to my second point, i sometimes add the marinated vinaigrette to the salad, give it a mix, and let that sit for a bit too, in the fridge for 30min-1hr. but that’s only if i have time and if im not preparing it to eat immediately. :) if i plan on eating immediately i’ll pop it in the freezer for 15 min bc i like my salads COLD.
