Cinco de Mayo 🇲🇽 is here—but not everyone’s cooking for a crowd.

Here’s how I turned one small grocery haul into 3 meals with big flavor, no food waste, and zero boring leftovers.

Quick, flexible, and made for smaller households (like mine).

Not traditional—just approachable ingredients that won’t wreck your budget or your weeknight energy.

What I made:

• 🥬 Southwest Egg Roll in a Bowl (eat as-is or wrap it up in a tortilla or wonton wrapper )

• 🌮 Taco Smash Pita with Slaw

• 🍠 Stuffed Sweet Potatoes with Corn, Beans & Cheese
