This crab cake eggs benedict just upgraded my Easter brunch

📌🦀 CRAB CAKE BENEDICT (Tami + Choco version)
INGREDIENTS
Crab Cakes
• ½ lb lump crab meat
• ½ lb claw crab meat
• ½ cup crushed saltine crackers
• ¼ cup panko (for coating)
• ¼ cup mayo
• 1 tsp Worcestershire sauce
• 1 tsp Old Bay
• ¼ tsp salt
• ¼ tsp black pepper
• ¼ cup orange bell pepper, finely diced
• 2 tbsp green onion, chopped
• 1 tbsp fresh parsley, chopped
• 1 tbsp fresh dill, chopped
• 1 egg
For Cooking
• 2 tbsp butter
• 1 tbsp oil

Hollandaise
• 2 egg yolks
• 1 tbsp lemon juice
• ½ cup melted butter
• pinch salt

DIRECTIONS
1. In a bowl, gently mix mayo, egg, Worcestershire, Old Bay, salt + pepper
2. Add bell pepper, green onion, parsley, dill
3. Fold in saltines, then gently fold in crab (keep lumps intact)
4. Form into patties, coat lightly with panko
5. Heat butter + oil on medium
6. Cook 3–4 min per side until golden + crispy

Hollandaise
1. Whisk yolks + lemon over warm water
2. Slowly drizzle in melted butter while whisking (don’t scramble 😅)
3. Season with salt
