My bf and I always have eggs Benedict for Easter breakfast. So, naturally, this brunch dish reminds me of Spring. I enjoy making egg Benedict’s anytime of the year at home too. Hope you enjoy this favorite of ours 🍳

Eggs Benedict Muffin Cups with Quick Hollandaise

Ingredients (4 servings):

• 2 English muffins, split & toasted

• 4 eggs

• 4 slices Canadian bacon/ham

• 2 egg yolks

• ¼ cup butter, melted & slightly cooled

• 1 tsp lemon juice

• Pinch salt

• Salt & pepper for eggs

Instructions:

1. Preheat oven to 375°F (190°C). Grease 4 muffin cups; place English muffin halves in each.

2. Top with bacon/ham, crack an egg in each, season. Bake 15–18 min until eggs set.

3. While baking, make Hollandaise: in a small heatproof bowl, whisk yolks, lemon, salt over simmering water. Slowly add butter while whisking until creamy.

4. Spoon sauce over baked eggs and serve immediately.
