Homemade meal ideas 😋🍽️

Cooking at home can taste better and be better for you! A huge benefit is being able to control your ingredients and what seasonings you cook with.

Here’s what I’ve been making lately!

🟠Chicken ricotta meatballs in a sun dried tomato and spinach cream sauce. This was a new recipe for me and it was delicious! Definitely a heavier meal because of the cream sauce, I wouldn’t make it all the time but it was so good and nice to have leftovers for lunches for the week. I paired it with a baked potato and steamed asparagus.

🔴My own roast chicken with homemade gravy from the chicken drippings, mashed potatoes, steamed asparagus and roast carrots. I love making my own roast chicken once a week for leftovers or to make a chicken soup with the rest. I make an herb butter to rub on my chicken before roasting and it makes the best gravy!

🟢Haddock and corn chowder. This is a hit whenever I make it! I made a huge batch for Christmas Eve this year and I got so many compliments on it. It’s such a good traditional thick New England chowder and not hard to make!

🟡Shrimp tacos, delicious and easy!

🟣Homemade turkey burgers on homemade burger buns with tater tots. This was one of my boyfriend and I’s favorite meals. I seasoned my own patties with garlic and fresh herbs and salt and pepper. Then I made my own buns and they were so easy and amazing! I also made my own Chipotle Mayo and these were a 10/10 and I’ll definitely be making them for cookouts this summer.

Similarly, a Whole Roasted Chicken isn't just delicious for one meal; the leftovers are fantastic for sandwiches, salads, or even turning into a quick chicken soup. For families, I always recommend looking for recipes that allow for some hands-off cooking time, like roasting, or those that can be prepared in stages. Think about prepping vegetables ahead of time or making sauces on the weekend. My Shrimp Tacos are another family favorite because everyone can customize their own, making dinner fun and interactive without much fuss. Now, if you're planning a dinner at home for two, the approach can be a little different. Many recipes scale down wonderfully! My Baked Cod with Parmesan and Roasted Red Pepper Couscous is a perfect example – it feels special but is incredibly simple to prepare for just two people. You can easily adjust the amount of cod and couscous without much hassle. Even the Turkey Burgers on homemade buns can be made into a romantic meal; imagine grilling them outside or serving them with a gourmet side salad instead of just tater tots. The beauty of cooking for two is the ability to experiment and make each meal feel a bit more intimate and personalized. And for those of us mindful of healthier eating – like reducing saturated fat – home cooking truly shines. When I make dishes like my Chicken Ricotta Meatballs in a creamy sun-dried tomato and spinach sauce, I know it's a richer meal. But even then, I can control the type of ground chicken I use (opting for leaner cuts) or choose lighter cream alternatives. For my Homemade Turkey Burgers, I always use lean ground turkey and load them up with fresh herbs and spices, making them incredibly flavorful without needing a lot of extra fat. When making the homemade buns, I sometimes swap in whole wheat flour for added fiber. And while I love a good Chipotle Mayo, you can always make a lighter version with Greek yogurt as a base to keep things fresh. The Baked Cod is naturally a fantastic lean protein choice, and pairing it with plenty of sautéed zucchini and couscous makes for a balanced meal.
