Soft Homemade Cinnamon Rolls
Cinnamon rolls are one of those recipes I kept testing until I finally got that pull apart, fluffy texture. The kind that stays soft the next day, not dry or dense like a lot of homemade versions.
The trick that made the biggest difference is pouring warm heavy cream into the pan right before baking. It melts into the dough as it bakes and keeps every roll soft and tender. The other thing that matters is not overbaking. Pull them out when the centers still look just barely set and they finish perfectly.
I finish mine with a cream cheese frosting while they are still warm so it melts right in. If you want something lighter, a simple vanilla glaze works just as well.
Ingredients
Dough
240g warm milk (1 cup)
57g unsalted butter, melted (1/4 cup)
1 large egg
67g sugar (1/3 cup)
360g bread flour (3 cups)
4g salt (3/4 tsp)
7g instant yeast (2 1/4 tsp)
Filling
113g softened unsalted butter (1/2 cup)
150g brown sugar (3/4 cup)
1 tbsp cinnamon
Before baking
120ml heavy cream (1/2 cup), warmed
Cream cheese frosting
113g cream cheese (1/2 block)
60g butter (1/4 cup)
120g powdered sugar (1 cup)
1 tsp vanilla
Instructions
1. Combine warm milk, melted butter, egg, and sugar. Mix until combined.
2. Add flour, salt, and yeast. Knead until smooth and slightly tacky, about 8 to 10 minutes.
3. Cover and let rise until doubled, about 1 to 1.5 hours.
4. Roll dough into a rectangle, spread butter evenly, then add brown sugar and cinnamon.
5. Roll up tightly and slice into rolls.
6. Place in a greased pan and pour the warm cream around the rolls, not over them.
7. Let rise again until puffy, about 45 minutes.
8. Bake at 350°F for 22 to 25 minutes. Pull them out while the centers still look soft.
9. Frost while warm.
My tip: I would pull these closer to 22 minutes for an even softer center. If you prefer something lighter, swap the frosting for a simple glaze made with powdered sugar and milk.

If you’ve ever struggled to achieve the perfect texture for homemade cinnamon rolls, you’ll appreciate the technique of adding warm heavy cream before baking. This method creates moistness throughout the dough, preventing the common issue of dry or dense rolls that often results from traditional recipes. One personal tip I’ve found helpful is to ensure the cream is just warm—not hot—so it integrates gently into the dough without collapsing the rolls. Another key factor is the timing when baking. Taking the rolls out while their centers are still a little underbaked allows residual heat to finish the cooking process, leaving you with pillowy soft centers. Overbaking inevitably leads to dryness. For the filling, combining softened butter with a generous amount of brown sugar and cinnamon creates that classic sweet, aromatic flavor. Don’t skimp on the cinnamon—it’s essential to the taste profile. Rolling the dough tightly ensures that each cinnamon swirl is visible and that every bite delivers a balanced cinnamon-to-dough ratio. In terms of finishing, cream cheese frosting is a popular choice as it melts into the rolls when they’re warm, adding richness and a slight tang that complements the cinnamon. However, if you prefer a lighter touch, a simple glaze made from powdered sugar and a splash of milk or vanilla extract provides just enough sweetness without overpowering the rolls. For anyone experimenting with homemade baking, I encourage you to try this method and adjust the bake time slightly to fit your oven’s quirks. You can also customize the filling by adding chopped nuts or raisins for added texture. Overall, mastering these soft homemade cinnamon rolls requires attention to ingredient temperatures, precise baking times, and a little patience—resulting in a delightful treat that stays soft even the next day.
