Need a quick and easy summer side dish?? Try this colorful, crispy, and tangy cucumber, tomato, and onion salad! I grow a veggie garden every year and usually have an abundance of cucumbers and tomatoes! So, I love to make this quick and easy salad for a side dish or light snack.

Mix together

1) 1 English cucumber, sliced

2) 3 garden-fresh tomatoes, cut into wedges

3) 1 sweet/red onion, thinly sliced

4) bottle of your favorite Italian or Greek dressing

5) salt & pepper

6) Cover and store in fridge for 1-2 hours!
