With a beloved meal prep for the week. And I do say “beloved,” because each one of these is worth all the time in the world set aside to make them (which isn’t much, tbh) 💌

A response I’ve seen, on more than one occasion, is the lack of time available to make substantial meals, rather than just some “grab and go.” So I want to share my meal prep process with you! I pick the night before or weekends to meal prep, and this is the breakdown for one week of my favorite meal of the day: breakfast. So much good food is coming. Here we go 🫶

Day 6: Veggie frittata with roasted sweet potatoes

*Beet hummus recipe on my page!

*Frittata is: 1 egg, 2 egg whites, spinach, 1/2 bell pepper, salt+pepper, mushrooms, green onion, tomatoes.

*While prepping sweet potato for your frittata, chop and cook some extra sweet potatoes for lunch/dinner this week 👌 Cube the potatoes, bake @ 425, 18-20 min.
