I've always found that serving custard pudding warm brings out its comforting flavors much better than the cold version. When I tried this warm custard pudding recipe from Teochew Alex, I appreciated the choice to cook it using an air fryer with a water bath for gentle, even cooking. This technique helps maintain the perfect silky texture. To enhance the caramel layer, you can adjust the sugar-cooking time for a deeper amber color, which gives a slightly richer taste. Also, the option to cover the foil container for a smooth top or leave it uncovered to get a deliciously textured tiger skin top lets you customize the pudding’s appearance and texture to your liking. For the custard, make sure to whisk the eggs and sugar thoroughly before mixing in warm milk; this ensures a smooth custard without lumps. Straining the mixture before pouring it over the caramel improves the final texture. Personally, I like to serve the pudding warm right out of the air fryer, sometimes adding a little fresh fruit on the side for a refreshing contrast. This recipe is simple but yields a delightful dessert that is sure to impress, especially if you enjoy homemade custard desserts with a comforting warmth.
